Greedy Hamster founded by Jim Askins and Tay Wilbanks

Our History

Founded by Jim Askins and Tay Wilbanks in 2015, The Greedy Hamster is serving distinctive cocktails and bistro-inspired small plates in a historic and welcoming bar space. Jim’s background in international operations and sales, site management and professional development provides fiscal and budget oversight for The Greedy Hamster.

Tay’s background in visual communications puts her at the helm of concept and team development, food and beverage programming, and daily management for The Greedy Hamster.

From a culinary perspective, the pair knew exactly what they wanted to do when they opened The Greedy Hamster is an eclectic and comfortable place for the community to gather for food and drinks. Inspired by large family gatherings and their Southern US and Portuguese culinary roots, The Greedy Hamster menu draws from the founder’s real life experiences. Nearly every menu item is made in house, including the signature French onion soup, which takes nearly 13 hours to make.
